EXCELLENZ® S 2001 is an alkaline alpha-amylase for use in granular, automatic dishwashing products. It is specifically developed for enhanced removal of tough starch soils, such as mixes of rice, corn, potato or wheat on dishes. EXCELLENZ® S 2001 hydrolyzes the glycosidic bonds in these soils, cutting the starch into soluble oligosaccharide fragments. These reactions products are then removed by the wash liquor.
