EXCELLENZ P 100 is an alkaline protease for use in liquid, automatic dishwashing products. It is specifically developed for enhanced removal of tough soils such as egg and meat residues on dishes. EXCELLENZ P 100 hydrolyzes peptide bonds found in these soils, cutting the protein into soluble peptides and amino acid fragments. These reaction products are then removed by the wash liquor.
