Rapidase® Press L is a kosher and halal certified liquid containing polygalacturonase (pectinase) derived from a selected strain of Aspergillus niger. Rapidase® Press L contains specific pectinases specifically developed for apple and pear pulp maceration, but also works well on berries. It can also be used for maceration of other fruit containing pectin, such as strawberry or raspberry. It hydrolyzes soluble pectin in cell walls, decreases mash viscosity, and improves juice extraction and yield dramatically. It is a unique maceration enzyme suitable for organic production.
