Rapidase® Power is a kosher and halal certified liquid containing polygalacturonase (pectinase) and α-Narabinofuranosidase (pectinase), derived from a selected strain of Aspergillus sp. Standardised activity: ≥ 165000 AVJP/g. It is specifically designed to depectinization at cold temperature (30°F to 36°F) to prevent alcoholic fermentation, loss of aromas, and color stabilization. It facilitates solids settling and clarification. No anthocyanase side activity. Rapidase® Power is the powerful, classical solution for concord grape juice. It meets the NTU spec of apple and pear juice, even with more difficult raw materials. Appearance: brown to deep brown liquid (product color may vary from batch to batch). The producing micro-organism is of non-GM origin. Preservative free. Suitable for vegans and vegetarians.
