Maxazyme® NNP DS is an enzyme preparation for food use containing endopeptidase (neutral protease) derived from aselected strain of Bacillus amyloliquefaciens (subtilis). It is used for the protein reduction of potable alcohol/spirits. It releases sufficient FAN (free amino nitrogen) with high percentages of adjuncts to faciliate fermentation.
