Delvo®Zyme Liquid is a clear liquid solution of the natural bacteriocin lysozyme chloride (E115), derived from chicken egg white. This natural preservative offers protection of ripened cheeses against gram positive bacteria, especially clostridium tyrobutyricum. It protects cheese (milk) from 'butyric late blowing'. It prevents cheese defects and waste. Utilization Dissolve in water prior to use.
