SOUR CREAM CONCENTRATE (66882) is produced by liberating the fatty acids in fresh cream, then encapsulating into a water soluble powder by spray drying with maltodextrin. One pound/kilo yields the flavour strength of approximately 80 pounds/kilos of sour cream; adds richness and mouthfeel to toppings, icings, frozen desserts, dessert mixes, sauces, soups, dips and dressings.
